Lemon Lovers Meatloaf

Ingredients:

¾ cup ketchup
¼ cup brown sugar
¾ teaspoon dry mustard
¼ teaspoon all spice dash ground cloves
1 ½ lb ground chuck beef
3 slices day-old bread, cubed
1 egg, slightly beaten
1/3 cup lemon juice
¼ cup chopped onion
2 teaspoon seasoned salt
6 very thing lemon slices


Preparation and Procedure:
  1. In small bowl mix together ketchup, brown sugar, dry mustard, all spice and cloves. Set aside. Mix together beef, bread cubes, egg, lemon juice, onion and salt. Mold into rounded flat loaf in 9-in pie plate.
  2. Spread half the reserved sauce over loaf and arrange lemon slices on top. Insert temperature probe so tip is in center of loaf. Cover tightly with plastic wrap, arranging loosely around probe to vent. Place in oven and cook for about 170 degree for 10 -15 minutes until the meat is cooked enough.
  3. Remove the loaf from the oven and stand for 5 minutes to firm before serving. Remove plastic wrap and spread remaining sauce over loaf before serving.

Serves: 6 servings

Mini Meatloaves:

Shape meat mixture into 6 individual loaves and arrange in12x8x2 inches dish. Cover with wax paper. Place in oven for 4 minutes at 170 degrees. Evenly divide half of sauce over loaves. Top each loaf with a lemon slice. Recover with wax paper. Rotate dish ½ turn. Oven for about 7 to 9 minutes at 170 degrees until well done. Heat and spoon remaining sauce over loaves before serving.
