Chicken Gumbo

Ingredients:

1 3-lb chicken
¼ cup flour
1 ½ teaspoon salt
¼ cup margarine
½ cup onions, chopped
2 ½ cup water
1 cup tomatoes, peeled and chopped
1 cup corn kernels
1 ¼ cup water
1 teaspoon pepper
1 teaspoon umami
1 ½ cup okra, cut

Procedures:

  1. Cut chicken according to desired sizes. Remove excess water using an absorbent paper. Coat in combined salt and flour.
  2. Fry the chicken in margarine until golden brown. Put water. Simmer until the chicken meat is tender. Remove chicken and place in a plate.
  3. Add tomatoes, corn kernels and water to the mixture. Season with salt and pepper. Cook the mixture about 20 minutes.
  4. Meanwhile, debone chicken and cut in to cube size. Add chicken to the mixture. Season with umami to add more flavor. Add also the okra. Let the mixture boil quickly. Remove from the stove and serve it hot.
