French Onion Soup

Ingredients:

¼ cup butter
4 medium onions, thinly sliced
3 cloves garlic, minced
2 (13 ¾ oz) cans beef broth
2 tablespoons dry sherry
½ teaspoon salt
1/8 teaspoon fresh ground pepper
4 to 5 slices French bread (optional)
1 to 1 ½ cups Swiss cheese, shredded (optional)

Procedures:
  1. In 3 quart casserole, place butter, onions and garlic. Cook for 8 to 10 minutes until onions are tender.
  2. Add beef broth, sherry, salt and pepper. Stir to blend and cook for 12 to 14 minutes

Serving Suggestion: Top individual servings of soup with one slice of French bread covered with Swiss Cheese. Cook for 30 to 45 seconds until cheese is completely melted.

Total Cooking Time is 20 ½ to 24 ¾ minutes.

Makes 4 to 5 servings

Cookware Tip:
Remember that casserole and dishes will be hot at the end of cooking. Always use an potholder or pad to remove casseroles and dishes from the stove.

Cook's Tip:
Before reheating soups or sauces, stir them thoroughly and continue to stir frequently during heating. Stirring liquid distributes the heat and allows for a good blend.
