Kare-Kare

Ingredients:

1 beef tail
2 beef legs
1 bundle of string beans (cut)
1 bundle of pechay (cut)
2 big eggplants
½ cup peanuts (ground)
1 handful of rice (ground)
chopped onions
cloves garlic, minced
cooking oil
annatto (ground)
salt
fermented krill

Procedure:

  1. Cut the beef tail and legs in a desired proportions. Simmer until tender.
  2. Saute the onion and garlic. Add the tenderized beef tail and legs.
  3. Add the ground peanuts and rice upon boiling.
  4. On a pan, put cooking oil and heat the annatto until its color combines with the oil.
  5. Add the oil with annatto to give color to kare-kare.
  6. Add the vegetables according to your style.
  7. Serve hot with rice.
Preparation of Condiment:
Saute garlic and onion until golden brown and add fermented krill. Add pork if desired.
