Mayonnaise

Ingredients:

4 pieces egg yolks
1 lemon fruit (extracted)
½ teaspoon salt
1 pint olive oil

Procedures:

Beat egg yolks until pale yellow. While beating, add the olive oil, salt and lemon juice gradually and alternately. Continue whisking until the mixture is thick. Wait until the mixture is fine and almost firm before adding the remaining oil. Your homemade mayonnaise is finished when the mixture has texture.
